Green Fried Rice
You asked, and here it is! This flavour-packed green fried rice has been on repeat in my kitchen. It’s quick, nutritious, and effortlessly delicious, thanks to the magic combo of Chilli Sambal and coconut oil.
It’s also super flexible—throw in extra veggies, use pre-cooked rice to save time, and add a fried egg if you fancy.

Ingredients:
100g pre-cooked brown rice
1.5 tbsp coconut oil
Large handful of kale leaves (stalks removed)
100g frozen petits pois
100g chestnut mushrooms, sliced
70g broccoli spears
Handful of fresh coriander, chopped
2-3 tbsp crispy onions (store-bought or homemade)
2 tbsp Chilli Sambal
1 fried egg (optional)
Pinch of salt
Method:
Step 1: Blanch the Veggies
Bring a small saucepan of water to a boil.
Add the broccoli and blanch for 2 minutes.
Stir in the peas, cook for another 20 seconds, then drain.
Step 2: Fry the Mushrooms & Kale
Heat a large frying pan over medium-high heat and add coconut oil.
Once hot, add the mushrooms and let them brown on one side before stirring.
Add the kale, cover for 2 minutes until wilted, then toss through.
Step 3: Combine Everything
Add the coriander, broccoli, peas, cooked rice, crispy onions, salt, and Chilli Sambal.
Stir well to combine and heat everything through.
Step 4: Optional Fried Egg
Spoon everything into a bowl.
Add a little more coconut oil to the pan and fry an egg.
Serve on top with another spoon of Chilli Sambal for extra heat.
