Saucy Baked Potatoes

This is a no-brainer winter comfort food—crispy, fluffy baked potatoes loaded with flavour. The best part? You can stack them high with whatever’s in your fridge. Cottage cheese adds a creamy, protein-packed base, while a drizzle of Peanut Salsa takes things to the next level.

Perfect for a quick weeknight dinner or a healthy lunch, this recipe is all about simplicity and big flavours.

Ingredients:

For the Potatoes:

  • 1 small baking potato (pricked with a fork, baked at 190°C for 1hr - 1hr 15)

  • 1 medium sweet potato (pricked with a fork, baked at 190°C for 35-40 mins)

For the Toppings:

  • 4 tbsp cottage cheese

  • Handful of blanched broccoli spears

  • 80g petit pois

  • 1 tbsp butter

  • Handful of fresh coriander, chopped

  • 1 radish, finely chopped

  • 2 tbsp Peanut Salsa

  • Pinch of salt & pepper

Method:

Step 1: Bake the Potatoes

  1. Preheat the oven to 190°C (fan 170°C, Gas Mark 5).

  2. Prick both the baking potato and sweet potato with a fork.

  3. Bake the baking potato for 1 hour - 1 hour 15 minutes until crispy outside and fluffy inside.

  4. Bake the sweet potato for 35-40 minutes at the same temperature.

Step 2: Load Up the Toppings

  1. Slice both potatoes in half and add the butter inside to melt. Season with salt & pepper.

  2. Divide the cottage cheese between the potatoes.

  3. Pile on the blanched broccoli, petit pois, chopped radish, and fresh coriander.

  4. Finish with a generous drizzle of Peanut Salsa and a last pinch of salt.
