Asparagus Lime Chilli Butter Tacos with Beans

Another delicious way to use up asparagus, which is in season right now. Damn, this was good! I used Bold Bean Co British carlin peas, and they worked perfectly instead of black beans, adding a unique, delicious nutty taste. If you can’t get carlin peas, black beans or kidney beans make a great substitute. If you don’t have chilli butter, try olive oil with fried garlic and chipotle paste.

This recipe works just as well for breakfast or dinner—tacos are always a good idea!

Makes: 2 tacos

Ingredients:

  • 2 tacos (I used @granluchito)

  • 25g chilli butter (@allthingsbutter)

  • 60g carlin peas or black beans (jarred or tinned)

  • 130g asparagus (blanched in boiling water for 2 minutes)

  • Zest of half a lime + juice of 1/3

  • 1/2 avocado, sliced

  • 15g Manchego or parmesan, grated

  • Few basil or coriander leaves

  • 1/2 tsp sesame seeds or crispy onions

  • Pinch of salt

Instructions:

  1. Heat the Tacos: Preheat the oven and heat the tacos for 5 minutes until warm and pliable.

  2. Prepare the Filling: Set a large frying pan over medium to high heat. Add the chilli butter, beans, and blanched asparagus. Simmer together for 1 minute, then add a pinch of salt, lime zest, and lime juice. Cook for another minute until the asparagus is tender and the flavours meld together.

  3. Assemble the Tacos: Place the avocado slices onto the warmed tacos. Pour over the asparagus and bean mixture, then top with grated cheese, fresh basil or coriander leaves, and a sprinkle of sesame seeds or crispy onions.

  4. Serve: Squeeze a bit more lime over the top for extra freshness and enjoy these tacos straight away while they’re hot!
