Wild Garlic Butter Cannellini Eggs with Grilled Asparagus

If you haven’t heard, wild garlic is in season! If you manage to get your hands on some, this recipe is a total winner. It's a fantastic savoury breakfast option, but it works just as well for dinner. Simple yet bursting with flavour, it’s sure to become a favourite. If you don’t have wild garlic on hand, you can mash up 1 chunky garlic clove into a paste and add it to soft butter along with a bunch (25g) of parsley or basil leaves, then blend it together!

Serves: 1

Ingredients:

  • 140g cannellini beans (I used @boldbeanco)

  • 1 large egg

  • 140g asparagus, ends trimmed

  • 2 tbsp olive oil

  • Few drops of lemon juice

  • Salt and pepper to taste

    Wild Garlic Butter:

  • 100g unsalted butter, softened

  • 30g - 40g wild garlic, washed and finely chopped

  • Salt and pepper to taste

Instructions:

  1. Grill the Asparagus: Set the oven to the grill setting at 220°C (430°F). Add the asparagus to a baking tray, drizzle with olive oil, and season with salt and pepper. Grill for about 10-12 minutes, depending on thickness, until they are golden and cooked through.

  2. Prepare the Wild Garlic Butter: Place all the ingredients for the wild garlic butter into a blender and blend until smooth. Season to taste with salt and pepper. This will make enough for 3-4 portions, so you can save the rest for another time!

  3. Cook the Beans: Set a frying pan to medium-high heat and add 1 tablespoon of the prepared wild garlic butter to melt. Add the cannellini beans and warm them through, stirring occasionally. Pour the beans onto a plate when done.

  4. Cook the Egg: Add another spoonful of the wild garlic butter to the same pan and let it melt. Crack open the egg into the pan, reduce the heat, and cover the pan. Cook for about 1.5 minutes or until the egg white is set and the yolk is cooked to your preference.

  5. Assemble and Serve: Place the cooked egg on top of the warm cannellini beans, followed by the grilled asparagus. Squeeze over a few drops of lemon juice to add a touch of freshness, and serve immediately.
