Saucy Peppers & Potatoes With A Poached Egg

Adding a fresh squeeze of lime juice to you roast potatoes adds a nice but of freshness and zing! Especially when you are working with Asian flavours. Smoked Pesto brings it all together for a very simple, cheap dinner.

For 2

Ingredients:

500g la ratte variety of potatoes, cut chunky and the same size

2 large red peppers, sliced lengthways

3 tbsp extra virgin olive oil

2 poached eggs

Juice 1/2 lime

Saucy Smoked Pesto

Par boil the potatoes for 10 mins.

Add to a baking with the chopped pepper. Season with olive oil, salt and pepper. Roast in a preheated oven at 190C degrees for 40mins or until golden and crisp.

Squeeze over the lime juice! Poach your eggs.

Serve with egg on top and 2 spoons of the Smoked Pesto!
