Lemon Cannellini Beans, Poached Egg & Chilli Oil

I made this for breakfast for the surfing crew at Marnie Rays this summer. Its so quick and easy! It’s a great savoury breakfast idea and full of protein. Made even better with some Saucy Chilli Oil or its really great as it is. I used jarred beans as they are so much nicer. Spinach or avocado would also be nice.

Serves 1

Ingredients:

X2 poached eggs

For the beans:

4-5 tbsp cooked cannellini beans (you dont need to rinse)

2 tbsp extra virgin olive oil

1/2 garlic clove, sliced

Few rosemary leaves

2 rind from a lemon and 1 tbsp lemon juice

Salt and pepper

Set a large frying pan to a medium heat and add the oil to warm.

Then add garlic, lemon rind and rosemary to fry for 2mins.

Then add cooked beans with lemon juice.

Season with pepper (as the beans are usually a little salted in the jar water). Toss for 20 seconds.

Serve on a plate with poached eggs on top and chilli oil. Pepper and salt for the eggs!
