Eggs & Beans With Wild Garlic Oil

A very easy high protein breakfast and it takes a few minutes to make. I love using the wild garlic oil when it’s in season to finish off dishes. I’ve been topping it on pasta, soups and any egg. It keeps for a while in the fridge too. The lemon juice helps keep the wonderful green colour too. If you can’t find wild G, then do this with parsley or coriander and a little grated garlic.

Serves 1

Ingredients:

1 egg

200g cannellini beans (I used Bold Bean)

1/2 a medium chilli, chopped

2 tbsp olive oil

Salt and pepper

For the oil:

30g wild garlic

80ml extra virgin olive oil

3 tbsp lemon juice

Add the oil ingredients to a blender and mix until smooth. About 35 seconds.

Fry the egg with some oil for 2 mins and then add the chilli. Cook for another 2mins before mixing in the beans to warm.

Plate up with a good splash of the garlic oil!
