Green Shakshuka
A very satisfying breakfast when you know its all come from bits and bobs lying in the fridge. This is ridiculously tasty. So so delicious and on the table in 15mins. You can mix around with the herbs that you have.

Serves 2
Ingredients:
2 tbsp olive oil
1/2 onion, sliced
2 garlic cloves, diced
1 tbsp tomato puree
90g asparagus, chopped (I used a baby one which was very quick to cook)
80ml veg stock
320g spinach
4 eggs
For the salsa:
1/2 tsp ground coriander
1/2 tsp ground cumin
20g coriander
20g basil
3 green spicy peppers
2 tbsp olive oil
2 tbsp water
Juice of 1/2 lemon
1 tbsp apple cider vinegar
Salt and pepper
Set a large frying pan to a medium to high heat and add 2 spoons of olive oil followed by the onions. Fry for 3 mins and then add garlic for 1 min.
Next throw in tomato purée and fry for 1 min.
Next pour in stock and add asparagus cooking for 2mins (more if bigger ones).
Then spinach and slowly cook down for 3 mins.
Make 4 small wells amongst the spinach and crack open the eggs. Cover for 3-3.5mins or until cooked.
In a blender, add all the salsa ingredients and blend until smooth. Serve this on top of eggs!
