Leek & Cheddar Omelette With Peanut Salsa

This was the first in my ‘What’s For Dinner, Nina?’ series on Instagram. A quick and easy way to elevate the humble omelette! I like mine topped with the Saucy Peanut Salsa, which you can buy here.

Serves 1

Vegetarian

Ingredients:

3 tbsp extra olive oil

1 tbsp butter

1/2 leek, roughly chopped

4 eggs, lightly beaten together (seasoned with salt and pepper)

40g grated mature cheddar cheese

Salt and pepper

1 tbsp Saucy Peanut Salsa (optional but advised)

Set a non-stick medium frying pan to a medium to high heat and add one spoon of olive oil and 1/2 the butter. Melt together!

Add chopped leek, salt and pepper. Fry without moving too much for 5mins. Put to one side.

Using the same pan, turn down the heat and add the rest of the oil and butter. Let it melt before pouring in the beaten egg.

Move the egg around the pan so that it mostly cooked but still a bit raw on top. Fry for about 1-1.5 mins.

Then quickly add the leeks and grated cheese on one side of the omelette.

Use spatular to flip one side on top of the other and squish it down for 10 seconds. Remove from the heat and slip the whole thing onto a plate. It should still be a bit gooey inside. Season with a spoon of Peanut Salsa. Eat straight away!
