Grilled Cheese Mushrooms

This is beyond easy and it is ridiculously good! The parsley dressing is very simple and it compliments the mushrooms perfectly. Serve with a rocket salad!

Ingredients:

Serves 2
4 portobello mushrooms, thick stem removed
4 tbsp olive oil
40g grated cheddar
40g grated Grana Padano
2 small garlic cloves, grated
salt and pepper
Persillade sauce:
20g flat-leaf parsley
zest of 1 lemon and the juice of 1/2
1/2 a small garlic clove, grated
60ml extra virgin olive oil

Set the oven to grill setting 230C degrees or around that. Add the mushrooms to a baking tray and coat each with a spoon of olive oil, salt and pepper. Grill stem side up for 6 mins.

In a bowl add the two kinds of cheese, grated garlic and lots of pepper. Mix! Then remove and mushrooms and divide the cheese mix between them and stack on top. Grill for another 5 mins until melted and bubbling.

While they are cooking, throw all the persillade ingredients together into a blender and mix until smooth. Plate up with the mushrooms and the sauce drizzled around them.
