Easy Oat Pancakes

These are deliciously delicate and you just throw it all into a blender. You could also dress in chocolate too and some fried bananas if you want another version.

Ingredients:

Makes 8 pancakes ( 2 greedy potions)
4 medium eggs
8 heaped tbsp oats
1.5 tsp vanilla extract
2 medium banana
160ml plant-based milk
Butter/coconut oil for frying

Berry compote:
150g frozen mixed berries
Handful brown sugar
Squeeze lemon juice

Almond flakes, yoghurt + maple syrup for toppings

Add all of the ingredients together for the pancakes except the butter/coconut oil into a high-speed blender and mix until smooth. About 35 seconds. Set a non-stick frying pan to medium heat and add 1 teaspoon of the oil to melt. When hot, pour in the first pancake and leave to gently fry for 2 minutes.

When you start to see little air bubbles on top, carefully use a frying spatula to flip over and cook on the other side for another 1.5-2 minutes. The side should be golden brown and then slip onto a plate. You might have to adjust the temperature every so often so that the pan doesn't get too hot. These are a more delicate type of pancake and can't take very high heat. Continue frying the rest.

Add the compote ingredients into a saucepan and set to medium heat. Allow the berries to break up and go a bit saucy. Cook for about 5-10 mins and then remove from the heat.

Divide the pancakes between two plates, add a few spoons of yoghurt, then the compote, maple syrup and almonds. Eat straight away. They are also good the next day warmed up!
