Josh's Spelt Pancakes

My brother-in-law @joshgledhill makes pancakes every Sunday and I have to admit that he makes them better than I do. This is a version inspired by the amazing light pancakes that he makes using spelt flour. They have the thickness of an American style but the size of a crêpe. These will brighten up a Sunday for sure!

Makes 6-7 pancakes (enough for two)
Ingredients:
180g spelt flour
2 medium eggs
400ml whole milk
1/2 tsp bicarbonate of soda

Butter and maple syrup for serving

Mix the flour and bicarbonate of soda together. Then make a well and crack open the two eggs. Use a wooden spoon to combine together. When it starts to get a bit dry start adding in a little of the milk. Then beat to form a thick paste and get rid of any lumps. Then add some more milk and mix a little at a time until all is incorporated. It should be a thickish batter!


Set a frying pan to a medium to high heat and add some butter. When hot add 3-4 tbsp of the batter moving the mix around the pan to create a largish pancake. Fry for about a minute until able to flip over. Fry on the other side for another minute or two until golden. Continue with the rest of the batter.
Josh's tip for the serving:
When the pancake is ready, add a small knob of butter on top and a good splash of maple syrup that has been warmed in sauce pan of hot water. This make the difference, trust me!
