Lazy Tomato Spaghetti
This is something that I make a lot in the summer months especially when the tomatoes are in season. I have been buying some great ones from the Isle of Wight recently. Cherry tomatoes are key to the quick cooking time but it’s great with a bigger variety. Just remember that the cooking time before you put the garlic in will be longer. This is the ultimate comfort food for me and works with most pasta varieties. Up there with one of my fave dinners.

Serves 1
Ingredients:
2 tbsp extra virgin olive oil, plus another spoon to finish
300g cherry tomatoes, half halved
25g fresh basil, stalks thinly sliced and leaves torn
4 garlic cloves, thinly sliced
45g parmesan, cut into small chunks with a knife
90g spaghetti
3-4 tbsp starchy pasta water
Salt + pepper
Set a saucepan to a medium to high heat and add 2 spoons olive oil. Then add the tomatoes and top with a lid with a gap for 4mins.
Meanwhile, when the tomatoes have cooked for 4mins set pasta water going. Salt the water and add pasta when boiling. Cook until 3 mins before packet says it is ready.
Back to tomato pan, stir in basil stalks and make a well in the middle of the pan. Turn down heat to a medium simmer and add garlic in the middle. Mix in the oil and cover again for 4 mins. It should all have softened!
Then stir in half the basil leaves and cover for another 2mins. Pour in 3 spoons of starchy pasta water, cheese chunks, remainder of basil and add pasta. Cook everything together for 1min. Season everything to taste and serve!
