One Pan Egg, Spinach, Butter Beans & Tahini

I had this during the week because I am trying to have less sweet breakfasts and mix it up. This was delicious, all in one pan and took 5mins to make! I always keep a good tahini in the fridge and I like the Al Taj brand and the Saucy Chilli Oil takes it up a notch. It’s still a great breakfast if you dont want the spice though.

Serves 1

Ingredients:

2 tbsp extra virgin olive oil

1 egg

Large handful spinach

60g butter beans

2 tbsp tahini

1 tsp sesame seeds

1 tsp Chilli Oil, optional

Salt and pepper

Set a large frying pan to a medium to high heat.

Add oil followed by egg on one side of the pan.

Fry for 1 min and add spinach on the other side.

When it’s wilted, add beans to warm.

Remove from heat.

Serve everything up with the tahini on top, sesame seeds and chilli oil. Season with salt and pepper.
