Rice Bowl, Greens & Saucy Chilli Oil

Sometimes I get asked what to serve with my chilli oil. This is one of the easiest ways and probably my most often used concept. If you can call it that! I find some veg and rice from the fridge and drizzle over a couple of spoons of the oil. That is lunch or dinner done! You can pack in the veg and also the flavour! Here I have added in a spoon of the kale pesto I made a few weeks ago.

Ingredients:

Serves 1 / Vegan

3 tbsp cooked short grain brown rice
200g rainbow chard, blanched for 3mins
200g Savoy cabbage, blanched for 4-5mins
Small bunch of coriander
1 tbsp pumpkin seeds
1 tbsp kale pesto
1/2 avocado, sliced
1 spring onion, thinly sliced
1 tbsp white wine vinegar
A squeeze of lime juice
2 tbsp Chilli Oil
Salt

Simply plate up all the vegetables and rice. Drizzle over vinegar, lime juice, pinch of salt and chilli oil.
