Fridge Forage Seasonal Soup
This is the kind of meal I make for myself when I need a booster and to clear out my veggie shelf. Its spicy and well saucy! A good midweek lunch or dinner.
Serves 2
Ingredients:
2 tbsp olive oil
1 chunky garlic, diced
1 banana shallot, sliced
1 hot green chilli, chopped
Bunch of coriander stems
100g green beans, ends trimmed
260g broccoli, cut into florets
650ml veg stock, hot
1 boiled potato, chopped into chunks (200g)
1 corn on the cob, corn sliced off
Handful spinach
Salt, pepper, sesame chilli oil, chopped coriander leaves to season
Set a large saucepan to a medium to high heat and add the olive oil. Then add the shallot and fry for 3 mins, followed by the garlic and green chilli and cook for another 2 mins. Then add the coriander stalks, green beans and broccoli and pour in the hot stock. Bring to the boil and cook for 5 mins. Add the cooked potato, corn and spinach for another 2 mins. Then blend soup and season with salt, pepper, oil and coriander.
