Hot Butter Pasta
I made this for a dinner party the other day and it went down a storm. It’s delicious and is my idea of fast food. It also costs next to nothing to make.

Ingredients
Grilled veg:
70g broccoli spears
1 tbsp of olive oil
pinch of salt
For the sauce:
40ml olive oil
1.5 medium chillis, thinly sliced and deseeded
handful of bunch of basil, finely chop the stalks
25g butter
3 garlic cloves, diced
25ml white wine
1/4 veg stock cube
1/2 tsp dried chilli flakes
zest of 1/3 lemon
60 ml starchy pasta water
20g Grana Padano, grated
120g spaghetti
Black pepper and salt
Method:
Preheat the oven to 220 C on the grill fan setting.
Add the broccoli, spoon of olive oil and salt in a baking tray. Grill broccoli for 5-6 mins giving it a mix half way. Remove from the oven.
Put the pasta to boil in salted water following the packet’s instructions. Towards the end of the booking, take out about 60-70ml of starchy pasta water and put to one side.
For the sauce, set a large frying pan to a medium to high heat and add the olive oil to heat up. Then add the chopped chillis and fry for 3 mins.
Next add the basil stalks followed by butter and garlic. Bring to a simmer for 1-2 mins. Then add the white wine, stock cube and chilli flakes. Simmer for 1 min and then remove from the heat.
Drain the pasta and add to the frying pan along with the grilled broccoli. Pour over half of the pasta water and toss everything together. Season with salt and grated cheese. Serve straightaway!
