Primavera Spaghetti, Burrata + Peanut Salsa
This is the last recipe in this mini pasta series. I hope you’ve enjoyed seeing the sauces in action and will think of pairing them with your weekly pasta recipes for an added kick of flavor. This Primavera Spaghetti always cuts the mustard, and the creamy burrata pairs wonderfully with the Peanut Salsa. It's a light, fresh, and springy dinner that comes together quickly.
Serves: 1
Ingredients:
40g frozen peas
1 ball burrata
Grilled Veg:
70g broccoli spears
1 tbsp olive oil
Pinch of salt
For the Sauce:
20ml olive oil
2 garlic cloves, diced
1/4 vegetable stock cube
Zest of 1/3 lemon
60ml starchy pasta water
15g Grana Padano, grated
Zest of 1/2 a lemon
80g spaghetti
1/2 - 1 tsp @saucyninaparker Peanut Salsa
Instructions:
Grill the Broccoli: Preheat the oven to 220°C on the grill fan setting. Add the broccoli spears to a baking tray, drizzle with 1 tablespoon of olive oil, and season with a pinch of salt. Grill for 5-6 minutes, mixing halfway through to ensure even cooking. Remove from the oven and set aside.
Prepare the Peas: Boil water and pour it over the frozen peas in a bowl to defrost them. Drain and set aside.
Cook the Pasta: Boil the spaghetti in salted water according to the package instructions. Towards the end of cooking, scoop out about 60-70ml of the starchy pasta water and set it aside.
Make the Sauce: Set a large frying pan over medium to high heat. Add the olive oil and let it heat up. Then, add the diced garlic and simmer for 1-2 minutes until fragrant. Crumble in the vegetable stock cube and stir until dissolved, then remove the pan from the heat.
Combine Pasta and Veggies: Drain the pasta and add it to the frying pan with the sauce. Add the grilled broccoli, lemon zest, and peas. Pour over half of the reserved starchy pasta water and toss everything together over low heat to combine.
Finish with Cheese and Salsa: Season the pasta with salt and add the grated Grana Padano cheese. Toss to coat. Finish with a spoonful (or more) of @saucyninaparker Peanut Salsa for a spicy kick.
Top with Burrata and Serve: Transfer the pasta to a plate and top with a ball of creamy burrata. Serve immediately while hot and enjoy!
