Pistachio Carrot Cake

You need this cake for Easter hols. Trust me on that! I’ve been making carrot cakes for years and have adapted my usual recipe so that it can be thrown into one bowl. Effortless but still light, fluffy with a top notch delicate icing. The Easter Bunny needs a nice carrot cake, so do the bunny a favour, and let me know what they say. 😉

Serves 8 chunky slices

Ingredients:

For the Cake:

  • 125ml sunflower oil

  • 150g unrefined caster sugar

  • 3 medium/large free-range eggs

  • 130g ground almonds

  • 1 tbsp spelt/plain/gf flour

  • 1/2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1 tsp ground cinnamon

  • Few gratings of nutmeg

  • 110g grated carrots (use the larger size on a grater)

  • 70g pistachios (40g roughly chopped for the base + 30g for the topping)

  • Pinch of salt

For the Icing:

  • 250g cream cheese at room temperature

  • 75g soft unsalted butter

  • 40g unrefined icing sugar

  • 1 tbsp blossom/plain honey

  • 1 tsp vanilla

Instructions:

  1. Preheat Oven and Prepare Tin: Preheat your oven to 170°C (340°F). Grease and line a 20cm by 27cm tin with baking parchment.

  2. Mix Cake Batter: In a large bowl, mix together the sunflower oil and sugar until combined. Beat in the eggs. Next, add in the ground almonds, flour, baking powder, bicarbonate of soda, spices, 40g chopped pistachios, grated carrots, and salt until just combined.

  3. Bake the Cake: Pour the batter into the prepared tin and place it in the middle of the oven. Bake for 30-35 minutes until the sides of the cake have started to come away and the top is light and springy to touch. Leave to cool completely before turning out of the tin.

  4. Make the Icing: While the cake bakes, clean a bowl and beat together the butter, icing sugar, honey, and vanilla until light and fluffy, about 5 minutes. Add in the cream cheese and beat until well mixed.

  5. Assemble the Cake: Once the cake has cooled, spread the icing on top and finish with the remaining 30g of pistachios.
