Hot Lemon Honey Halloumi Chopped Salad with Butter Beans and Radicchio

I have been really enjoying creating this series. There is something very satisfying about chopping everything together in a mess like this. Maybe this says more about me than the salad. Anyway, this halloumi is a total joke. You have to make it. The spicy honey lemon combination with this cheese is a real winner. This concept will work with green leaves if you can’t find these fancy ones. This is lunch or dinner sorted!

Serves: 1

Ingredients:

Salad:

  • Handful of roasted carrots (about 3 per person, roasted with salt, pepper, and olive oil at 190°C for 30 minutes until golden and sticky)

  • 300g mixed Tardivo and Castlefranco leaves

  • 90g butter beans

Hot Honey Halloumi:

  • 2 tbsp olive oil

  • 3 slices halloumi cheese

  • Good few pinches of chilli flakes

  • 1 tsp honey

  • Squeeze of lemon juice

  • 1 tbsp sesame seeds

Dressing:

  • 1 tsp French mustard

  • 3 tbsp lemon juice

  • 1 tbsp apple cider vinegar or white wine vinegar

  • 3 tbsp extra virgin olive oil

  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad: Prep all the leaves and chop them on a large chopping board with the roasted carrots until you get nice bite-sized pieces. Add to a large bowl along with the butter beans.

  2. Make the Dressing: In a bowl, mix together all the ingredients for the dressing and taste to check the seasoning. Pour over the salad and toss together. Pile onto a plate.

  3. Cook the Halloumi: Set a large frying pan to medium-high heat. Add 2 tablespoons of olive oil and the halloumi slices. Let them fry for 3 minutes until golden underneath. Add a good pinch of chilli flakes over the top of each slice and flip them over. Turn down the heat a little and spoon over the honey, then squeeze the lemon juice on top. Sprinkle the sesame seeds over the golden side. Fry for another 1-2 minutes.

  4. Assemble and Serve: Top the salad with the hot honey halloumi slices. Eat straight away.
