Roast Salmon with plum tomatoes and thyme

I tend to have some salmon every week and I’m always thinking up new ways to make it exciting. I made this when I only had 15 minutes to get it ready and it was delicious so I thought it would be great for my Insta-Lunch-Live. This week I had my wonderful friend and director Tessa Edwards join me for lunch to talk about all of her upcoming projects and how she got into film.

Serves 2

Ingredients:

2 garlic cloves, sliced

2 large handfuls of plum tomatoes, halved

few sprigs of thyme

3 tbsp extra virgin olive oil

1/2 a red onion thinly sliced with a mandolin

large handful of basil leaves, roughly torn

zest and juice of 1 lemon

sea salt and black pepper

Preheat oven to 200 degrees and line a baking tray with baking parchment. Add the salmon with the olive oil, thyme leaves, sliced garlic, plum tomatoes, red onion, lemon zest and half of the juice, salt and pepper. Mix everything together with your hands so that it is well coated with the flavours. Place into the oven for 5 minutes and then remove adding in the basil leaves. Mix everything around again and turn the oven to the grill setting. Place under the grill for 3-4 minutes to colour the top and now the salmon should be cooked. Squeeze over some more lemon and serve!

Serve with some kale that has been roasted in the same oven for 3-4 minutes with salt, pepper and olive oil. I have also added in some short grain brown rice to bulk it up!
